Patriotic Snow Cone Cupcakes

It’s nearly America’s 250th birthday, and you’ve got to have cake to celebrate a birthday! I decided to go with making patriotic cupcakes, and since Texas summers are so hot, I thought it’d be fun to make the cupcakes look like one of my favorite summer treats – snow cones!

These snow cones are easy to make, but you do need one special tool – a silicone mold for the frosting. If you’ve made cocoa bombs you should already have these on hand! I’ll share a picture of the mold below, and if you scan the QR code for the recipe you can also get a link to where to buy the mold for yourself.

To make the cupcakes look like snow cones, just pipe a row of red, then white, then blue frosting into the silicone molds, or you can always do different colors of frosting for other occasions. Then gently stick a cupcake top-first into each mold and (this is important!) freeze the molds until the frosting is solid, so it’s easy to peel out of the mold.

Pour sanding sugar (this has larger grains than normal sugar) into a bowl and dip each cupcake into the sugar while the frosting is still frozen Then let the cupcakes thaw at room temperature and stick a little spoon or straw into each one. You’re all set for some festive fun!
