Honey Cookies

These honey cookies are a perfect cookie for spring. They’re super easy to make and they don’t take very many ingredients. They’re slightly sweet and would be delicious to have at Easter brunch!

HONEY COOKIES

Cookie Ingredients:

– 1 cup unsalted butter, softened

– 3/4 cup sugar

– 1/4 cup honey

– 1 teaspoon vanilla bean paste

– 2 1/2 cups all purpose flour

– 1 pinch of salt

 

Glaze Ingredients:

– 3/4 cup powdered sugar

– 1 tablespoon honey

– 1 tablespoon heavy cream

– 1/4 teaspoon vanilla bean paste

 

Directions:

1. Cream together the butter and sugar in the bowl of your mixer. Scrape down the sides of your bowl and mix until fluffy.

2. Add the honey, vanilla bean paste and salt.

3. Gradually add the flour and mix until no longer crumbly and the dough comes together. Form the dough into a disc, wrap with plastic wrap and chill in the fridge for at least one hour.

4. Preheat the oven to 350 degrees.

5. After chilling the dough, roll it out to 1/4″ thickness (I like to use a rolling pin with rings to make sure my dough rolls evenly) on a floured surface.

6. Cut out the cookies using your desired cookie cutter and place them on cookie sheets lined with parchment paper.

7. Bake 7-10 minutes or until the edges and bottoms are slightly golden.

8. In a small bowl, combine the glaze ingredients and mix until smooth. Pipe the glaze in a drizzle over each cookie (or you can dip the cookies if you want them completely covered).
